This Steak is developed especially for this blog and our followers. We wanted to create a way how EVERyone can cook a perfect steak even if one cooks the first time is his life. If that works, it would be a huge target achieved from this blog.
BASICS
- Ribeye Steak 180g each person
- Green Baby Asparagus 170g
- Garlic 6g
- Rosemary 6g
- Mustard 1 Teaspoon 2g
- Olive Oil 1 Tablespoon 7g
- Salt and Pepper
STEAK
TIP One of the best tips I came across during my time of finding out how to make a steak an easy dish – but then maybe I was just not skilled enough – is, let it get room temperature and let it rest afterwards. Seriously, that is VERY important for EVERytime you cook a piece of meat.
TIP So … take the steak and SALT it properly. Here we go – I admit I never learned cooking, never went to a cooking school and there seems to be a 50/50 community weather to salt the steak or not. The best answer I can give you (without reference for now) is the following: IF you salt meat, something happens to the protein chains in the meat which changes the amount of water they loose in the process. If you would salt the meat and let it rest for hours its a different story of course, however, SALT it. PEPPER is a different story, as pepper develops bitterness during the cooking process if it gets to hot. Same with garlic actually so make sure not to throw Garlic in the hot pan.
EVERcooks steak works like this:
- Salt room temperature steak
- Put it in a VERY hot frying pan with a bit of olive oil, fry it 2 minutes first side, turn around 2 minutes
- Reduce heat already when you turned it around, add the mix of mustard, chopped garlic, rosemary, olive oil and pepper to the top side of the steak.
- After two minutes, turn the steak around for another 30 to heat up mustard and co, then turn AGAIN for 30 more seconds. I admit – its EVERcook style but it works just for EVERybody.
- Take it out of the pan, put it strait into tinfoil, wrap it up and take care of the asparagus.
- DO NOT TOUCH it until asparagus is ready. If you want to fry the asparagus just use the still hot frying pan for 30 seconds each side.
- If you want a little bit of sauce, use a little butter in the pan to melt – thats it.
ASPARAGUS
As promised, it is a very very simple dish. Cut the lower third of the asparagus, bring half a litre water to boil. Then just for 3 minutes cook the asparagus in there. Add a little bit of brown or white sugar (about a tablespoon) to the cooking water to reduce the bitterness of the asparagus. After 3 minutes take if off the heat and drench the water, just leave the asparagus in the hot pan so it keeps warm until serving. For additional fun, you can put the asparagus later in the frying pan to the steak to grill it a little bit, but its really not necessary for baby asparagus.. DONE
