Spareribs BBQ

Obviously this is written during the big Covid19 crisis 2020, just mentioning this in case somebody reads this blog at a later stage 🙂

EVERCOOK tried to improvise a bit cause he misses his BBQ sooooo much being quarantined in the Moscow apartment – so this is what I came up with for all of you who want to experience BBQ feeling being trapped inside.

BASICS

  • Spare Ribs 1 kg
  • 1 Cube Chicken broth, 1 Cube Vegetable broth
  • Coca Cola 330ml
  • Ketchup 150ml
  • Spring Onion 1
  • Honey 2 Tablespoons
  • Thyme
  • Garlic 4 Cloves
  • Chilli 1 piece
  • Worchester sauce 1 Tablespoon
  • Laurel Leaves 3 pieces
  • tin foil

SPARE RIBS part 1

Start with 1,5 ltr water and cook it with the Chicken and Vegetable broth dried cubes (obviously you can use fresh as well but that is just seriously too much hassle)

This is important: REMOVE the silver skin from the spare ribs. IF you don’t know how to do that, YouTube it and let me know, if its many people I ll make a tutorial myself, its pretty easy with a spoon and a bit of kitchen paper.

Well, throw the spare ribs into the boiling soup, cook them for 40 minutes.

BBQ Sauce

While you do so, take another pot, cut garlic, spring onion and chilli and roast them a bit in olive oil. Careful don’t let it get too brown as the garlic will taste bitter. Then add Coca Cola and Ketchup and the rest of your spices.

Cook for 20 minutes, then add Honey.

Cook for another 15 minutes, let it reduce nicely then seven it into a different pot and just put it back on the heat until your spare ribs are ready for the oven.

SPARE RIBS Part 2

Oven, circulating air 200 degrees C, 40 minutes total

Take the spare ribs out of the soup, dry them a little bit, put the BBQ sauce over both sides of them (this should be a creamy consistency by now) and wrap them up in tin foil before putting them into the oven.

After 20 minutes open the tin foil careful, turn the spare ribs around and let them grill with an increase heat of 220 degrees for 10 minutes each side.

You will see when they are crusty, then they are ready to enjoy.

THATS IT

Take them out of the oven, you can use the rest of the BBQ sauce for dipping, cut the ribs into pieces and be very very happy about your indoor BBQ.

I think this is a perfect dish for times of quarantine, there is enough time for cooking, especially as you don’t have to stand next to it for the whole time, preparation time is like 5 minutes once you get overt the silver skin.
