Mango Chilli Rucola Salad

Hey EVERybody!

I want to share with you today a very nice salad which is a perfect side dish for meat dishes, and will make you look like a star chef in front of your friends and family. Well, at least that‘s what i keep being told by them. I just love living in my little dream world where I am NOT one of those amateur singers in a show like country got talent who start singing and cause the natural reaction by billions of viewers: Why don’t friends tell her/him that she/he just cannot sing at all. Well sorry, if my dishes actually don’t taste at all, let me tell you – you wasted a couple of minutes of your lifetime at this point reading all of the above. On the bright side, you might have anyway even if below is a good recipe 😂😂

ANYWAY, BASICS

  • 1 Mango 205g
  • 1 Pack of Rucola 120g
  • 1 Lime
  • Cocktail Tomatoes 280g
  • Dijon Mustard (or any) 2 Teaspoons or 12g
  • Olive Oil 4 Tablespoons or 30g
  • Chilli 10g
  • Honey if needed 10 g

MANGO

I decided to give Mango – or more precisely – how to cut a mango a special tab. So… how to cut a mango – I wonder about that EVERy time and I have no clue. I have seen many videos on it which look so easy and yet it somehow never is.

Now anyway don’t give up, I find it more important it’s kind of a harder mango. Use a vegetable peeler and peel the mango first. Now try to cut off a slice of the long side and with any luck you don’t catch the stone. There is more ways of how to use the mango for the salad but I prefer trying to get 0,5 to 1 cm cubes. I will upload a VIDEO on how to cut a mango anyway but here is the secret: Do not get frustrated with it her as many cubes out of it as you can but just snack the rest or give it to your starving friends who are Waiting for the earlier mentioned roast beef!

SALAD

Now another tip cut the rucola a bit it’s just nicer to eat and easier to put on the table. Mix the mango with the Rucola, add 2 tbs of olive oil, salt and pepper, the cut Chilli to your taste, half of the lime, a teaspoon of mustard and honey or vinegar depending on the sweetness of the mango.

Now you can put the half cut tomatoes in there as well but I just like to sprinkle them around the salad on the plate as it looks better.

So, well done now you are ready to get complimented by friends and family for your AWESOME salad!! You can buy one of those rings to  put the salad nice and dosed in the middle of the plate and then put meat or even shrimps etc ok top of it or next to it. It will look very nice wit a splash of additional pepper and olive oil around the plate.
